I’ve struggled off and on since last spring with gluten – that is, I like it, but it doesn’t like me. I don’t have celiac disease, thank goodness, but my doctor has diagnosed me as having gluten intolerance. (Now, THAT’S a term I can get with… it makes me feel like I am the one in control, as opposed to being the other way around. “Gluten, I will not tolerate your nonsense one second more!”)

And in keeping with theme of new year/new beginnings/blah blah blah, I have decided to be kind to my body. No more eating gluten to “fit in” with friends/coworkers/etc. and then suffering through several hours/days of a distended belly. No more eating gluten just because something looks reeeeeeaaaaaaaaaaaalllllly amazing. The view is not worth the climb (or, more accurately, the bloated, fart-ridden tumble down the other side of the mountain).

I need to be mindful of what I eat, obviously, but a gluten-free lifestyle is really not a big deal. I’ve found plenty of bread, pasta, cookies, and crackers with which to stuff my face. Pre-packaged gluten-free products get pricey, though, and we all know I’d prefer to spend my pennies on Star Trek memorabilia.

So, in 2013, I am going to make a concerted effort to start making my own gluten-free goodies. I promise to share my dizzying, nosebleed-inducing highs as well as my hysterical, tragicomic lows. Trust me, folks, you’ll want to stay tuned: Most of my baking efforts turn out similar to below.

Anyone out there have any good GF recipes to share? Or horrific ones to stay away from?
